Zucchini Bread

Zucchini Bread

Preheat oven to 325.

Whisk together:
3 eggs
1 cup oil (I did half oil/half applesauce)
2 cups sugar (I used half white/half brown)
1-2 tsp vanilla

Add:
3 cups flour (white or wheat is fine)
1 tsp salt
1 tsp soda
1 tsp baking powder
3 tsp cinnamon

Mix lightly then add:
2 cups grated zucchini

Divided into two greased loaf pans and bake for 55-60 minutes (mine took 58). Let cool for 5 minutes, remove from pans, then cool completely on a rack.
